Eat Your Veggies

I spent some time on Pinterest again this week.  The most interesting idea I saw was the Salad in a Jar. The idea is to prep your salads for the week, so you can grab and go. We are trying to stay in the habit of eating more vegetables and prepping them ahead of time, but this was one step more. The Piper has asked that, now that he is retired, we eat our larger meal at noon. In the past we had done this when he worked second shift, and he had always preferred the heavier meal earlier in the day. I prefer this because I am much more likely to cook earlier in the day. So I made up some salads  in jars to be used as our suppers. We will probably combine these with cheese and crackers and whatever protein might be left from the main meal. I took the opportunity to use some of these Green Ball Jars from Amazon. They are so cute and country!

Layered in 4 jars:

  • Raw Cauliflower
  •  Carrots
  •  Celery
  • Snap Peas
  • Radishes
  • Multi Colored Mini Peppers
  • Broccoli
  • Canned Chick Peas, drained and rinsed
  • Grated Cheese
  • Green Onions
  • Romaine Lettuce
  • 2 Tablespoons of vinaigrette dressing on the bottom

In the last two jars I split a bag of pre-made Mexican salad. We will add some avocado and maybe some black beans to those two.

We have eaten veggies stored in the covered Mason Jars at least 5 days later, and have found no decrease in crispness . We did place the raw cauliflower in the bottom of the jar-to sit in the small amount of vinaigrette, this kept all the other veggies from becoming soggy, and marinated the cauliflower. The Piper also has decided that he does not like eating the salads directly from the jars. He finds the mouth too narrow  and the fork too short for  his comfort.  That is not a problem-he just dumped the whole jar into a very large shallow soup bowl. The great thing about dumping the jar is that his salad is topped with the tasty marinated cauliflower from the bottom of the jar! I will point out that a quart Mason Jar holds 4 cups of vegetables-more than my recommended daily intake! And after a day spent cleaning brooder cages,baking bread, puttin’ up strawberries and gathering eggs-this ole hen does not have to make supper-it’s all in the jar!
